- 3–5 tbsp iced water
- 6 fresh figs (quartered)
- 1/4 cup brown sugar
- 1/2 cup pistachios (roughly chopped)
Instructions
- In a large bowl, whisk together flour, granulated sugar, salt, and cinnamon. Add cold butter and mix until crumbly.
- Slowly drizzle iced water into the mixture, mixing gently until it forms a dough. Wrap in plastic wrap and chill for 1 hour.
- Preheat the oven to 400°F (200°C). Roll out the chilled dough on a floured surface to about a 12-inch circle.
- Toss quartered figs with brown sugar and chopped pistachios. Spoon filling onto the center of the dough, leaving a 2-inch border.
- Fold the edges over slightly toward the center to create pleats. Brush with egg wash and sprinkle extra sugar on top if desired.
