Description

Ingredients

  • 1 cup dark chocolate (60% cocoa or higher)
  • 1/2 cup full-fat coconut cream
  • 3/4 cup granulated sugar
  • 1 tsp flaky sea salt (plus extra for topping)
  • 2 tbsp unsalted butter (room temperature)

Instructions

  1. In a medium saucepan over medium heat, combine the sugar with enough water (about 2 tbsp) to moisten. Cook until the mixture turns amber, about 10 minutes.
  2. Remove from heat and stir in the coconut cream until fully combined and smooth.
  3. Mix in the butter and sea salt, let cool slightly, then chill in the fridge for about an hour.
  4. Melt the dark chocolate using a microwave or double boiler until smooth.
  5. Scoop chilled caramel into tablespoon-sized balls and roll them between your hands. Dip each ball into the melted chocolate to coat thoroughly.
  6. Place truffles on parchment paper; sprinkle with extra sea salt before they set.
