- 1 lb ground turkey
- 2 cups butternut squash, peeled and cubed
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped (red or yellow)
- 2 tsp cumin
- 2 tbsp chili powder
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Sauté chopped onion and bell pepper until softened, about 5 minutes. Add minced garlic and cook for an additional minute.
- Push vegetables to the side and add ground turkey. Cook until browned, breaking it apart as you go (about 6 minutes).
- Stir in cumin, chili powder, salt, and pepper until evenly combined.
- Add diced tomatoes (with juices) and cubed butternut squash. Mix well.
- Pour in broth to cover the mixture slightly. Bring to a boil then reduce heat to low. Cover and let simmer for approximately 30 minutes until the squash is tender.
- Serve hot with your favorite toppings.
