Description

  • 1 lb ground turkey
  • 2 cups butternut squash, peeled and cubed
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped (red or yellow)
  • 2 tsp cumin
  • 2 tbsp chili powder
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion and bell pepper until softened, about 5 minutes. Add minced garlic and cook for an additional minute.
  2. Push vegetables to the side and add ground turkey. Cook until browned, breaking it apart as you go (about 6 minutes).
  3. Stir in cumin, chili powder, salt, and pepper until evenly combined.
  4. Add diced tomatoes (with juices) and cubed butternut squash. Mix well.
  5. Pour in broth to cover the mixture slightly. Bring to a boil then reduce heat to low. Cover and let simmer for approximately 30 minutes until the squash is tender.
  6. Serve hot with your favorite toppings.
