Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté until softened (about 5 minutes). Stir in minced garlic for an additional minute.
- Add chicken breasts to the pot; season with salt and pepper. Cook for about 5 minutes per side until lightly browned.
- Pour in chicken broth and add rinsed chickpeas; bring to a gentle boil while stirring occasionally.
- Reduce heat to low and simmer for 20 minutes or until chicken is fully cooked (165°F).
- Remove chicken from the pot, shred it using two forks, and return it to the soup along with spinach or kale.
