  • 2 cups canned chickpeas, rinsed
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 6 cups low-sodium chicken broth
  • 2 cups fresh spinach or kale
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté until softened (about 5 minutes). Stir in minced garlic for an additional minute.
  2. Add chicken breasts to the pot; season with salt and pepper. Cook for about 5 minutes per side until lightly browned.
  3. Pour in chicken broth and add rinsed chickpeas; bring to a gentle boil while stirring occasionally.
  4. Reduce heat to low and simmer for 20 minutes or until chicken is fully cooked (165°F).
  5. Remove chicken from the pot, shred it using two forks, and return it to the soup along with spinach or kale.
  6. Simmer for another 5 minutes until greens are wilted. Adjust seasoning before serving hot.
