  • 1 lb beef chuck roast, cut into bite-sized pieces
  • 1/2 cup pearl barley
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium beef broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat. Brown the beef chunks on all sides for about 10 minutes.
  2. Add the onions, carrots, celery, and garlic; sauté for about 5 minutes until softened.
  3. Pour in the beef broth and enough water to cover the ingredients by an inch. Stir in bay leaves and thyme; bring to a boil.
  4. Once boiling, add barley and reduce heat to low. Cover and simmer for about 1 hour or until the beef and barley are tender.
  5. Season with salt and pepper to taste before serving hot.
