- 1/2 cup pearl barley

- 2 bay leaves
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- In a large pot or Dutch oven, heat olive oil over medium-high heat. Brown the beef chunks on all sides for about 10 minutes.
- Add the onions, carrots, celery, and garlic; sauté for about 5 minutes until softened.
- Pour in the beef broth and enough water to cover the ingredients by an inch. Stir in bay leaves and thyme; bring to a boil.
- Once boiling, add barley and reduce heat to low. Cover and simmer for about 1 hour or until the beef and barley are tender.
- Season with salt and pepper to taste before serving hot.
