  • 2 medium Yukon Gold potatoes, diced
  • 2 large carrots, sliced
  • 1 cup bell peppers, chopped (any color)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 14.5 oz can diced tomatoes (with juice)
  • 4 cups low-sodium beef broth
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add a splash of oil and sauté the chopped onion until translucent. Add minced garlic and cook for an additional minute.
  2. Add the ground beef to the pot, breaking it apart as it cooks until evenly browned (about 5 minutes).
  3. Stir in the diced potatoes, carrots, bell peppers, canned tomatoes (with juice), and seasonings. Mix well.
  4. Pour in enough beef broth to cover the ingredients by about an inch and bring to a gentle boil.
  5. Reduce heat to low and let simmer uncovered for 30-40 minutes until thickened.
  6. Taste and adjust seasonings if necessary before serving hot.
