  • 1 can (4 oz) diced green chilies
  • 1 cup sweet corn (frozen or canned)
  • 1 ½ cups shredded cheddar cheese
  • 1 cup cornmeal
  • 1 cup whole milk (or almond milk)
  • 1 large egg
  • 2 tsp baking powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a 9×13 inch baking dish with nonstick spray.
  2. In a skillet over medium heat, brown the ground beef until fully cooked; drain excess fat.
  3. Stir in green chilies, sweet corn, half of the cheddar cheese, salt, and pepper; remove from heat.
  4. In a bowl, mix cornmeal, milk, egg, and baking powder until just combined.
