  • 1 lb chorizo sausage (spicy or mild)
  • 2 medium sweet potatoes (peeled and diced)
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) kidney beans (rinsed and drained)
  • 1 medium yellow onion (chopped)
  • 4 cloves garlic (minced)
  • 3 cups low-sodium vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large pot over medium heat, crumble and cook the chorizo until browned. Drain excess grease on paper towels.
  2. In the same pot, sauté chopped onion until translucent; add minced garlic in the last minute.
  3. Return chorizo to the pot and stir in sweet potatoes, diced tomatoes with juices, kidney beans, and vegetable broth.
  4. Season with salt, pepper, and optional spices to taste. Mix well.
  5. Bring to a boil then reduce heat; simmer uncovered for 30-40 minutes until sweet potatoes are tender.
