  • 2 large carrots, sliced thick
  • 2 stalks celery, chopped

  • 8 cups low-sodium beef broth
  • 2 bay leaves

Instructions

  1. In a large pot over medium-high heat, add oil and brown the beef in batches until caramelized. Remove and set aside.
  2. In the same pot, sauté onions, carrots, and celery for about 5 minutes. Add minced garlic and cook for an additional minute.
  3. Return the beef to the pot. Add barley, bay leaves, and enough broth to cover everything. Bring to a simmer.
  4. Cover and let cook on low heat for about an hour until the beef is tender.
