  • 1 cup heavy cream (or coconut cream for dairy-free)
  • 2 medium carrots, sliced
  • 2 cups fresh spinach (or kale)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion and minced garlic until golden brown, about 3 minutes.
  2. Add sliced carrots along with salt and pepper; stir occasionally until softened, about 5 minutes.
  3. Pour in the vegetable broth and bring to a gentle boil. Reduce heat and let simmer for 10 minutes.
  4. Add gnocchi; cook until they float to the surface, about 3–5 minutes.
  5. Stir in heavy cream (or coconut cream) and fresh spinach; cook until spinach wilts down, approximately 2 minutes.
