- 1 cup powdered sugar (for dusting)
Instructions
- Bloom the gelatin: In a small bowl, combine gelatin with 1/4 cup water. Let sit for 10 minutes until thick.
- Prepare sugar mixture: In a saucepan over medium heat, combine granulated sugar, corn syrup, and remaining 1/4 cup water. Stir constantly until it reaches a gentle boil.
- Mix together: Remove from heat once the mixture reaches 240°F (115°C). Add bloomed gelatin and vanilla extract; stir until well combined.
- Whip it: Transfer to a stand mixer and whip on high speed for about 10 minutes until fluffy and white.
- Set: Pour marshmallow fluff into a greased baking dish dusted with powdered sugar. Spread evenly and sprinkle more powdered sugar on top.
