Description

  • 1 lb ground chicken
  • 2 tbsp fresh ginger, grated
  • 3 garlic cloves, minced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup plain breadcrumbs
  • 1/4 cup sweet chili sauce
  • 2 tbsp lime juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, ginger, garlic, cilantro, breadcrumbs, salt, and pepper until well mixed.
  3. Form the mixture into golf ball-sized meatballs and place them evenly on the baking sheet.
  4. Bake for 20-25 minutes until golden brown and the internal temperature reaches 165°F (75°C).
  5. While baking, mix sweet chili sauce and lime juice in a small bowl.
  6. Serve meatballs drizzled with the sauce over jasmine rice or enjoy them alone.
