  • 3 boneless, skinless chicken breasts (about 12 oz)
  • 1/2 cup fresh basil pesto
  • 1 ripe avocado, diced
  • 4 slices crispy bacon, chopped
  • 4 large flour tortillas
  • 2 cups mixed greens

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper, then place them in the baking dish. Bake for 20-25 minutes until fully cooked (165°F internal temperature).
  3. While the chicken is baking, prepare your pesto by mixing if using store-bought.
  4. After baking, let the chicken cool slightly before slicing it into bite-sized pieces.
  5. On each tortilla, spread a layer of pesto, then add mixed greens, sliced chicken, diced avocado, and chopped bacon.
  6. Roll each tortilla tightly around the fillings and cut in half diagonally. Serve immediately.
