  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup fresh flat-leaf parsley, finely chopped
  • 1/4 cup red wine vinegar
  • 1/2 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine minced garlic, parsley, red wine vinegar, and olive oil to create the chimichurri marinade.
  2. Pat the chicken breasts dry and season both sides with salt and pepper.
  3. Place chicken in a zip-top bag or shallow dish and pour the marinade over it. Let it marinate in the refrigerator for at least 30 minutes.
