  • 1 lb lean ground beef
  • 1 cup enchilada sauce (red or green)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, brown the ground beef for about 6-8 minutes, breaking it apart as it cooks. Drain excess fat.
  3. Add chili powder, cumin, salt, and pepper to the beef; cook for an additional 2 minutes.
  4. Pour in the enchilada sauce and mix well. Gently fold in the cooked tortellini until evenly coated.
  5. Stir in half of the shredded cheeses until melted and blended.
  6. For a crispy topping, transfer to a greased baking dish, sprinkle remaining cheese on top, and bake at 350°F (175°C) for 15-20 minutes until bubbly.
