  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2 tablespoons fajita seasoning
  • 8 small flour or corn tortillas
  • 2 tablespoons olive oil
  • sour cream, guacamole, salsa (to taste)

Instructions

  1. Slice the bell peppers and onion into thin strips.
  2. Heat olive oil in a large skillet over medium-high heat until hot.
  3. Add ground beef and cook for 6-8 minutes, breaking it apart until browned.
  4. Stir in sliced bell peppers and onion along with fajita seasoning. Sauté for about 5 minutes until veggies are tender.
  5. Warm tortillas in another skillet or wrap in foil and place in a low oven.
  6. Assemble fajitas by loading tortillas with the beef mixture and desired toppings. Serve immediately.
