  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup blue cheese crumbles
  • ¼ cup red onion, thinly sliced

  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta in boiling salted water until al dente according to package instructions. Drain and rinse under cold water.
