  • 2 cups low-sodium vegetable broth
  • 1/2 cup dried apricots, chopped
  • 1/2 cup dried cranberries
  • 1 cinnamon stick
  • 1/2 tsp ground nutmeg
  • 4 cardamom pods, crushed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil

Instructions

  1. Rinse rice under cold water until clear to remove excess starch.
  2. Set Instant Pot to sauté mode; heat olive oil. Add onion and garlic; cook for about 3 minutes until soft.
  3. Stir in rinsed rice, vegetable broth, dried apricots, cranberries, and spices.
  4. Seal the lid and cook on high pressure for 6 minutes. Manually release the pressure once cooking is complete.
  5. Fluff the rice pilaf with a fork and serve garnished with fresh herbs if desired.
