- 4 cloves garlic, minced
- 4 cups low-sodium beef broth
- 2 tsp fresh thyme (or 1 tsp dried)
- 2 bay leaves
Instructions
- Heat oil in a large pot over medium-high heat. Season beef with salt and pepper; brown on all sides, then set aside.
- In the same pot, sauté onions and garlic until translucent.
- Add carrots and potatoes; cook for a few minutes before returning the beef to the pot.
- Pour in broth to cover ingredients by an inch; add thyme and bay leaves. Bring to a boil.
- Reduce heat to low, cover, and simmer for about 2 hours until meat is tender.
