  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 4 medium carrots, sliced
  • 3 medium potatoes (Russet or Yukon Gold), cubed
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tsp fresh thyme (or 1 tsp dried)
  • 2 bay leaves

Instructions

  1. Heat oil in a large pot over medium-high heat. Season beef with salt and pepper; brown on all sides, then set aside.
  2. In the same pot, sauté onions and garlic until translucent.
  3. Add carrots and potatoes; cook for a few minutes before returning the beef to the pot.
  4. Pour in broth to cover ingredients by an inch; add thyme and bay leaves. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 2 hours until meat is tender.
  6. Remove bay leaves before serving. Enjoy with crusty bread or over rice.
