- 2 medium carrots, diced
- 1 medium zucchini, diced
- 2 stalks celery, chopped
- 4 cloves garlic, minced
- 1 (14 oz) can diced tomatoes
- 6 cups low-sodium vegetable broth
- 1 (15 oz) can cannellini beans, drained and rinsed
- 2 tsp dried oregano
- Handful of fresh basil leaves for garnish
Instructions
- In a large pot over medium heat, warm olive oil. Add onion, carrots, and celery; sauté until softened (about 5 minutes).
