  • 2 medium carrots, thinly sliced
  • 1 cup green beans, trimmed and cut into bite-sized pieces
  • 1 can (14 oz) diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 1/4 cup fresh basil, chopped
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients by washing and chopping all vegetables.
  2. In a large pot over medium heat, add olive oil and sauté the carrots and zucchini for about 5 minutes until softened.
  3. Add the diced tomatoes with their juices and vegetable broth; bring to a gentle boil while stirring occasionally.
  4. Stir in the green beans and half of the strawberries; simmer for another 10 minutes.
  5. Gently fold in the remaining strawberries and chopped basil; let sit off heat for about 2 minutes before serving.
