- 1 cup dried unsweetened apricots, chopped
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 medium carrots, chopped
- 2 tsp ground cumin
- 2 tsp ground coriander
- 4 cups low-sodium vegetable broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onions and minced garlic; sauté until fragrant and translucent (about 5 minutes).
- Stir in the chopped carrots along with ground cumin and coriander; cook for an additional 2 minutes.
- Add rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce heat to simmer for 25–30 minutes.
- Once lentils are tender, mix in the chopped apricots and simmer for another 10 minutes.
- Adjust seasoning with salt and pepper as desired before serving.
