Ingredients

  • 1 cup green or brown lentils
  • 1 cup dried unsweetened apricots, chopped
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 medium carrots, chopped
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 4 cups low-sodium vegetable broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions and minced garlic; sauté until fragrant and translucent (about 5 minutes).
  2. Stir in the chopped carrots along with ground cumin and coriander; cook for an additional 2 minutes.
  3. Add rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce heat to simmer for 25–30 minutes.
  4. Once lentils are tender, mix in the chopped apricots and simmer for another 10 minutes.
  5. Adjust seasoning with salt and pepper as desired before serving.
