  • 1 cup green or brown lentils
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, chopped
  • 4 cups low-sodium vegetable broth
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1 tsp ground turmeric
  • 2 tbsp olive oil

Instructions

  1. Turn on your Instant Pot and select the sauté function. Add olive oil, chopped onion, and minced garlic. Sauté until translucent (about 5 minutes).
  2. Add chopped carrots along with cumin, coriander, cinnamon, and turmeric. Stir for an additional minute until fragrant.
  3. Incorporate rinsed lentils and vegetable broth; stir well.
  4. Secure the lid and set to high pressure for 15 minutes.
  5. Once cooking is complete, perform a quick release of pressure carefully.
