  • 8 oz spaghetti
  • 2 tbsp olive oil
  • 3 cloves fresh garlic (minced)
  • 1 cup cherry tomatoes (halved)
  • 1 medium zucchini (sliced into half-moons)
  • 2 tbsp freshly squeezed lemon juice
  • ¼ cup fresh basil (chopped)
  • Salt and pepper to taste

Instructions

  1. Cook spaghetti in salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, warm olive oil. Add minced garlic and sauté for about one minute until fragrant.
  3. Add cherry tomatoes and zucchini to the skillet, stirring occasionally for about five minutes until slightly softened.
  4. Return cooked spaghetti to the skillet, squeeze lemon juice over everything, and toss gently to combine.
  5. Season with salt and pepper. Remove from heat and sprinkle fresh basil on top before serving.
