  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 4 large egg yolks
  • 2 teaspoons pure vanilla extract
  • Pinch of salt

Instructions

  1. Gather all ingredients and utensils: medium saucepan, whisk, mixing bowl, and fine mesh strainer.
  2. In the saucepan over medium heat, combine milk and heavy cream until steaming but not boiling.
  3. In a mixing bowl, whisk egg yolks and sugar until pale yellow and slightly thickened (about 2 minutes).
  4. Gradually pour half of the warm milk mixture into the egg yolk mixture while whisking continuously. Return the mixture to the saucepan.
  5. Cook over low heat, stirring constantly until thickened enough to coat the back of your spoon (about 5 minutes).
  6. Remove from heat, strain through a fine mesh strainer into another bowl, stir in vanilla extract and salt, then serve warm or chill before enjoying.
