  • 1/2 cup unsalted butter, softened
  • 6 garlic cloves, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh sage, chopped
  • 1 lemon, halved
  • 2 tablespoons olive oil
  • 4 medium carrots, chopped
  • 2 large onions, quartered

Instructions

  1. Preheat oven to 325°F (165°C). Remove giblets and pat the turkey dry.
  2. Combine butter with garlic and herbs in a bowl. Rub this mixture all over the turkey, including under the skin.
  3. Stuff the cavity with lemon halves and herb sprigs.
  4. Arrange carrots and onions around the turkey in a roasting pan; drizzle them with olive oil, salt, and pepper.
  5. Roast for about 13 minutes per pound or until internal temperature reaches 165°F (74°C).
  6. Let the turkey rest for 20 minutes before carving.
