  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 5 cups mixed greens (spinach and arugula)
  • 1 cup strawberries, chopped
  • 1 large apple (Granny Smith or Fuji), chopped
  • ½ cup pecans or walnuts (optional)
  • 2 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp honey
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat. Season chicken breasts with salt and pepper. Optionally marinate in olive oil and balsamic vinegar for 30 minutes.
  2. Grill chicken for 6-8 minutes on each side until it reaches an internal temperature of 165°F. Remove from heat and let rest for 5 minutes.
  3. While the chicken rests, chop strawberries and apple into bite-sized pieces; combine with mixed greens in a large bowl.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
  5. Slice grilled chicken into strips and place on top of the salad. Drizzle with dressing and sprinkle nuts if desired.
