Ingredients

  • 1 block (14 oz) firm tofu
  • 1 cup shelled edamame (fresh or frozen)
  • 3 green onions, thinly sliced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp fresh ginger, grated
  • 2 cups green cabbage, shredded
  • 2 tbsp rice vinegar
  • 1 tbsp cooking oil (for frying)

Instructions

  1. Press the tofu to remove moisture for about 15 minutes. If using frozen edamame, cook according to package instructions until tender.
  2. In a bowl, crumble pressed tofu and combine it with cooked edamame, green onions, soy sauce, ginger, and a pinch of salt. Mix until chunky.
  3. Form the mixture into six patties about an inch thick.
  4. Heat oil in a skillet over medium heat and fry patties for 5 minutes on each side until golden brown.
  5. While cooking, whisk rice vinegar and ginger together in a bowl; toss in shredded cabbage and let sit to marinate.
  6. Assemble burgers on toasted buns or lettuce wraps topped with ginger slaw.
