  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 medium Granny Smith apples, diced
  • 2 celery stalks, thinly sliced
  • 1 cup walnuts, roughly chopped
  • 1/2 cup dried cranberries
  • 1/2 cup plain Greek yogurt
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Season the chicken with salt and pepper and bake for 25-30 minutes until cooked through (165°F internal temperature). Allow cooling before dicing.
  2. While the chicken cools, prepare the apples and celery.

  4. In a large bowl, combine diced chicken, apples, celery, walnuts, and cranberries. Add the dressing and mix gently.
