- 1 cup plain breadcrumbs
- 1 large egg
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/4 cup ketchup (plus extra for topping)

Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
- In a skillet, sauté the onion in olive oil until translucent, then add garlic for an additional minute.
- In a large bowl, combine ground turkey, drained zucchini, sautéed onion and garlic, breadcrumbs, egg, half of the ketchup, salt, and pepper. Mix gently until combined.
- Shape the mixture into a loaf in the prepared pan and spread remaining ketchup on top.
- Bake for about 60 minutes or until the internal temperature reaches 165°F (75°C). Let rest for 10 minutes before slicing.
