  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/4 cup balsamic vinegar
  • 1 cup fresh basil leaves
  • 12 oz penne pasta
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken in balsamic vinegar, olive oil, garlic, salt, and pepper for 15-20 minutes.
  2. Cook pasta in salted boiling water until al dente (8-10 minutes). Drain and set aside.
  3. Grill marinated chicken over medium-high heat for 6-7 minutes per side until cooked through (165°F).
  4. In a skillet, sauté halved cherry tomatoes with olive oil for about 3-4 minutes until they burst; add fresh basil.
  5. Combine drained pasta with the sautéed tomatoes and any remaining marinade over low heat.
  6. Slice grilled chicken and serve on top of the pasta mixture. Drizzle with balsamic glaze before serving.
