  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly spray a baking dish with nonstick cooking spray.
  2. In a small bowl, whisk together olive oil, minced garlic, salt, and pepper. Rub the mixture over the pork tenderloin until fully coated.
  3. Heat a skillet over medium-high heat and sear the pork on all sides for about three minutes each until golden brown.
  4. Transfer the seared pork to the baking dish and roast for 20-25 minutes until it reaches an internal temperature of at least 145°F (63°C).
  5. While the pork is roasting, combine blackberries, balsamic vinegar, honey, chicken broth, and salt in a saucepan over medium heat. Cook until thickened (about five minutes), stirring occasionally.
  6. Once cooked, let the pork rest for five minutes before slicing into medallions. Serve drizzled with blackberry sauce.
