- 1 pound chicken, tofu, or shrimp

- 2 tablespoons vegetable oil
- ¼ cup low-sodium soy sauce
- 1 tablespoon honey or brown sugar
- 1 teaspoon minced ginger
- 1 teaspoon minced garlic
Instructions
- Rinse the rice under cold water until clear. Cook according to package instructions (around 20 minutes for white rice).
- Cut chicken or shrimp into bite-sized pieces or cube tofu. Sauté in vegetable oil over medium heat for 5-7 minutes until cooked through.
- Add mixed vegetables to the skillet and sauté for another 4-5 minutes until tender-crisp.
- In a small bowl, combine soy sauce, honey (or brown sugar), ginger, and garlic. Mix well.
- Pour the sauce over the protein and veggies in the skillet; stir to coat and simmer for an additional couple of minutes.
