  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 1.5 lbs baby potatoes, halved
  • 1 packet (1 oz) ranch dressing mix
  • 1 cup sour cream
  • 1.5 cups shredded sharp cheddar cheese
  • 1 cup breadcrumbs (panko recommended)

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a baking dish with non-stick spray.
  2. In a large bowl, season diced chicken with salt and pepper. In another bowl, mix ranch dressing mix, sour cream, and half of the cheddar cheese until creamy.
  3. Layer half the potatoes in the baking dish, followed by the seasoned chicken. Pour the ranch mixture over the top and layer with remaining potatoes and cheese.
  4. Cover with foil and bake for 45 minutes until chicken is cooked through (165°F internal temperature).
  5. Remove the foil, add breadcrumbs on top, and bake uncovered for an additional 10-15 minutes until golden brown.
