  • 4 large flour tortillas
  • 1 cup pizza sauce
  • 2 cups shredded cheese (mozzarella and cheddar blend)
  • 1 cup cooked chicken (shredded) or pepperoni (sliced)
  • 1 cup bell peppers (diced)
  • ½ cup black olives (sliced)
  • ½ cup sour cream
  • ¼ cup fresh cilantro (chopped)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly coat a 9×13 inch baking dish with nonstick spray.
  2. In a bowl, mix the cooked chicken (or pepperoni), diced bell peppers, olives, and half the cheese with the pizza sauce until well combined.
  3. Lay out each tortilla and fill with about ¼ cup of the mixture. Roll tightly and place seam-side down in the baking dish.
  4. Pour any remaining pizza sauce over the enchiladas and top with the rest of the cheese.
  5. Cover with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until golden brown.
  6. Let cool slightly before serving, then garnish with sour cream and cilantro.
