- 4 medium bell peppers (red, yellow, or green)
- 2 cups chopped fresh mushrooms (cremini or button)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup cooked rice or quinoa
- 1 cup shredded mozzarella cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 tsp olive oil
Instructions
- Preheat oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
- Cut the tops off the bell peppers and remove seeds. Place them upright in the baking dish.
- In a skillet over medium heat, add olive oil. Sauté onions and garlic until fragrant. Add chopped mushrooms; cook until soft.
- In a bowl, combine the mushroom mixture with cooked rice/quinoa, half the cheese, Italian seasoning, salt, and pepper. Mix well.
- Generously fill each bell pepper with the mixture and top with remaining cheese.
- Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10-15 minutes until golden.
