Description

  • 4 medium bell peppers (red, yellow, or green)
  • 2 cups chopped fresh mushrooms (cremini or button)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup cooked rice or quinoa
  • 1 cup shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Cut the tops off the bell peppers and remove seeds. Place them upright in the baking dish.
  3. In a skillet over medium heat, add olive oil. Sauté onions and garlic until fragrant. Add chopped mushrooms; cook until soft.
  4. In a bowl, combine the mushroom mixture with cooked rice/quinoa, half the cheese, Italian seasoning, salt, and pepper. Mix well.
  5. Generously fill each bell pepper with the mixture and top with remaining cheese.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10-15 minutes until golden.
