- Juice of 1 lemon
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss the cubed butternut squash in 2 tablespoons of olive oil, salt, and pepper. Spread on the baking sheet and roast for 25-30 minutes until tender.
- In a medium saucepan, combine rinsed quinoa and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until fluffy.
- While roasting the squash and cooking quinoa, remove stems from kale and chop into bite-sized pieces. Massage with remaining olive oil and a pinch of salt for about two minutes until softened.
- In a large bowl, combine cooked quinoa, massaged kale, and roasted squash. Drizzle with fresh lemon juice before tossing gently.
