Ingredients

  • 4 cups kale (chopped)
  • 1 cup quinoa (rinsed)
  • 2 cups water
  • 2 cups butternut squash (peeled and cubed)
  • 3 tbsp extra virgin olive oil (divided)
  • 1 tsp sea salt (adjust to taste)
  • 0.5 tsp black pepper (freshly ground)
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss the cubed butternut squash in 2 tablespoons of olive oil, salt, and pepper. Spread on the baking sheet and roast for 25-30 minutes until tender.
  3. In a medium saucepan, combine rinsed quinoa and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until fluffy.
  4. While roasting the squash and cooking quinoa, remove stems from kale and chop into bite-sized pieces. Massage with remaining olive oil and a pinch of salt for about two minutes until softened.
  5. In a large bowl, combine cooked quinoa, massaged kale, and roasted squash. Drizzle with fresh lemon juice before tossing gently.
