  • 3 lbs pork shoulder
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 tbsp dried oregano
  • 1 tbsp cumin
  • 2 bay leaves
  • ½ cup fresh orange juice
  • 2 tbsp lime juice
  • Salt and pepper to taste

Instructions

  1. Cut the pork shoulder into large chunks and season with salt and pepper.
  2. Set your Instant Pot to sauté mode. Add oil, then sauté chopped onion and minced garlic until fragrant.
  3. Add pork chunks to the pot and brown on all sides for enhanced flavor.
  4. Stir in oregano, cumin, bay leaves, orange juice, and lime juice until well combined.
  5. Seal the lid and cook on high pressure for 60 minutes. Allow natural pressure release for 10 minutes before performing a quick release.
  6. Shred the carnitas with two forks right in the pot. For extra crispiness, spread onto a baking sheet and broil briefly.
