  • 1.5 lbs pork tenderloin
  • 1 lb baby Yukon Gold or red potatoes
  • 4 cloves fresh garlic
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Season the pork tenderloin generously with salt, pepper, minced garlic, rosemary, and thyme.
  3. Cut the potatoes in half or quarters and arrange them around the seasoned pork in the baking dish. Drizzle everything with olive oil and sprinkle additional herbs on top.
  4. Roast in the oven for 25-30 minutes until the internal temperature of the pork reaches 145°F (63°C).
  5. Allow the pork to rest for 10 minutes before slicing into medallions. Serve alongside roasted potatoes, drizzled with pan juices.
