  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 2 cups cubed pumpkin (or butternut squash)
  • 4 cups mixed greens (arugula and spinach)
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1/2 cup crumbled feta cheese
  • 1/3 cup chopped walnuts (toasted if desired)

Instructions

  1. 1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. 2. Toss pumpkin cubes with 1 tablespoon olive oil, salt, and pepper. Spread on the prepared baking sheet and roast for about 25 minutes until golden brown and tender.
  3. 3. In a skillet, heat the remaining olive oil over medium heat. Season chicken breasts with salt and pepper, cooking for 6-7 minutes per side until cooked through.
  4. 4. In a large bowl, combine mixed greens with balsamic vinegar.
  5. 5. Once the chicken has rested, slice it into strips. Add roasted pumpkin, sliced chicken, feta cheese, and walnuts to the greens; toss gently.
