- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss the diced sweet potatoes in 1 tablespoon of olive oil, salt, and pepper. Spread them on the baking sheet and roast for 25-30 minutes until golden.
- In a large skillet, heat the remaining olive oil over medium heat. Add chopped onion and minced garlic; sauté until fragrant (about 2 minutes).
- Add ground beef to the skillet, breaking it up as it cooks until browned (about 5 minutes). Season with cumin, paprika, salt, and pepper.
- Once the sweet potatoes are done roasting, combine them with the beef mixture in the skillet. Gently fold in fresh spinach until wilted.
