  • 1 lb lean ground beef
  • 2 medium sweet potatoes (about 1 lb), peeled and diced
  • 2 tbsp extra virgin olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups fresh spinach
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss the diced sweet potatoes in 1 tablespoon of olive oil, salt, and pepper. Spread them on the baking sheet and roast for 25-30 minutes until golden.
  3. In a large skillet, heat the remaining olive oil over medium heat. Add chopped onion and minced garlic; sauté until fragrant (about 2 minutes).
  4. Add ground beef to the skillet, breaking it up as it cooks until browned (about 5 minutes). Season with cumin, paprika, salt, and pepper.
  5. Once the sweet potatoes are done roasting, combine them with the beef mixture in the skillet. Gently fold in fresh spinach until wilted.
  6. Serve warm, drizzled with your favorite sauce or dressing.
