Ingredients

Scale
  • 8 oz beef flank steak
  • 1/4 cup Korean BBQ sauce (divided)
  • 4 oz fresh ramen noodles
  • 2 green onions, chopped
  • 1 cup mixed vegetables (bell peppers, carrots, bok choy)
  • 1 tsp sesame oil
  • 4 cups low-sodium chicken broth
  • 3 cloves garlic, minced

Instructions

  1. Marinate the beef: Slice flank steak against the grain into thin strips and mix with half of the Korean BBQ sauce. Let marinate for at least 30 minutes.
  2. Grill the beef: Preheat the grill over medium-high heat. Grill beef strips for about 3-4 minutes per side until charred and cooked through. Set aside.
  3. Prepare the broth: In a large pot, heat sesame oil over medium heat. Sauté minced garlic until fragrant, then add chicken broth and bring to a simmer.
  4. Cook the noodles: Add fresh ramen noodles to the simmering broth and cook according to package instructions (around 3 minutes).
  5. Assemble: Stir in mixed vegetables and remaining BBQ sauce into the broth.
  6. Serve: Ladle into bowls, top with grilled beef slices, and garnish with chopped green onions.
