  • 3/4 cup granulated sugar
  • 1 cup heavy cream
  • 1 tablespoon unflavored gelatin
  • 1 graham cracker crust (store-bought or homemade)

Instructions

  1. Preheat oven to 350°F (175°C). If using a premade crust, place it on a baking sheet. For homemade, mix crushed graham crackers with 5 tablespoons melted butter and press into a pie dish.
  2. In a saucepan, combine cranberries and sugar with enough water to cover. Boil until cranberries burst (about 5 minutes), then cool slightly.
  3. Bloom gelatin in cold water per package instructions; mix into the warm cranberry mixture. Whip cream until soft peaks form, then fold into the cranberry mix.
  4. Pour mousse into the crust and smooth the top. Refrigerate for at least 4 hours until set.
