Description

  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup sweet corn (fresh or canned)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup bell peppers (red and green), diced
  • 1 jalapeño, seeded and minced (adjust to taste)
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp fresh lime juice
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the black beans and chop the vegetables.
  2. In a large bowl, combine the black beans, corn, tomatoes, bell peppers, onion, jalapeño, and cilantro.
  3. In a separate small bowl, whisk together the olive oil and lime juice; season with salt and pepper.
