  • 14 oz extra-firm tofu, pressed and cubed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 medium carrot, julienned
  • 2 tbsp vegetable oil
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil

Instructions

  1. Drain and press the tofu to remove moisture; cut into bite-sized cubes.
  2. Slice bell peppers, chop broccoli into smaller florets, and julienne the carrot.
  3. Heat vegetable oil in a large skillet over medium-high heat; add tofu and cook until golden brown (about 5 minutes).
  4. Add bell peppers, broccoli, and carrots; stir-fry for another 5 minutes until tender-crisp.
  5. In a small bowl, mix soy sauce and sesame oil; pour over the stir fry and toss to combine.
  6. Serve warm with rice or noodles; garnish with sesame seeds if desired.
