- 1 medium butternut squash (about 2 lbs)
- 1 lb sweet or spicy Italian sausage
- 8 oz spaghetti or penne pasta
- 3 cloves garlic, minced
- 2 tbsp olive oil
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Halve the butternut squash lengthwise, scoop out seeds, drizzle with olive oil, season with salt and pepper, and place cut-side down on the baking sheet.
- Roast the squash for 30-35 minutes until tender and caramelized.
- While the squash roasts, cook the pasta according to package instructions in salted water until al dente; drain and set aside.
- In a skillet over medium heat, brown the sliced sausage until cooked through; add minced garlic during the last couple of minutes.
- Once roasted, scoop out the squash flesh into a bowl and mash lightly. Combine it with pasta and sausage mixture; mix well.
- Serve hot, garnished with grated Parmesan cheese.
