Description

Zucchini fritters are a crispy, savory delight that perfectly blend fresh zucchini with aromatic garlic and rich Parmesan cheese.   • 2 medium zucchinis (about 300g)
  • 1 cup all-purpose flour (120g)
  • 2 large eggs
  • ½ cup grated Parmesan cheese (50g)
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tbsp olive oil (30ml)

Instructions

  1. Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel.
  2. In a large bowl, combine the grated zucchini, flour, eggs, Parmesan cheese, minced garlic, salt, and pepper until well mixed.
  3. Heat olive oil in a frying pan over medium heat.
  4. Drop spoonfuls of the mixture into the hot oil and flatten gently with a spatula. Cook for 3-4 minutes per side until golden brown and crispy.
  5. Transfer cooked fritters to paper towels to drain excess oil before serving.
