  • 1 cup toasted walnuts, coarsely chopped
  • 1 cup bell peppers, julienned
  • 1 cup carrots, julienned
  • 1 cup cucumber, julienned
  • ½ cup fresh cilantro, chopped
  • 2 tbsp soy sauce
  • ¼ cup smooth peanut butter
  • 2 tbsp fresh lime juice
  • 1 tbsp soy sauce (optional for added flavor)

Instructions

  1. Prepare your workspace by clearing a large surface area and gathering all ingredients.
  2. Toast the walnuts in a dry skillet over medium heat for about 5 minutes until golden brown. Let cool and chop coarsely.
  3. Julienne the bell peppers, carrots, cucumber, and chop the cilantro.
  4. Soak each rice paper wrapper in warm water for about 10 seconds until pliable. Lay flat on a clean surface.
  5. Place approximately two tablespoons of the vegetable mixture and walnuts on each wrapper, fold in sides tightly, and roll to seal.
  6. For the dipping sauce, whisk together peanut butter, lime juice, and soy sauce in a small bowl until creamy.
