Description

  • 2 medium zucchini (about 400g)
  • 1 cup panko breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tsp garlic powder
  • 2 large eggs, beaten
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice zucchini into fry-like shapes (about 1/2 inch thick).
  3. In one bowl, beat the eggs. In another bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
  4. Dip each zucchini strip into the egg mixture and then coat with the breadcrumb mix.
  5. Place coated zucchini on the baking sheet and bake for 20-25 minutes until golden brown, flipping halfway through.
