Description

German Potato Pancakes, or Kartoffelpuffer, are a delightful combination of crispy edges and tender centers that evoke the warmth of family gatherings. Perfect for brunch or as a savory side dish, these pancakes are easy to make and can be topped with applesauce, sour cream, or even smoked salmon for an elevated experience. The simple ingredients come together to create a comforting treat that everyone will love.

Ingredients

Scale
  • 2 medium starchy potatoes (about 1 lb), peeled and grated
  • 1 medium onion, finely chopped
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup vegetable oil or clarified butter for frying

Instructions

  1. Grate the potatoes using a box grater or food processor. Squeeze out excess moisture with a clean kitchen towel.
  2. In a large bowl, mix the grated potatoes with chopped onion, eggs, flour, salt, and pepper until just combined.
  3. Heat about 1/4 inch of oil in a skillet over medium-high heat until hot.
  4. Drop spoonfuls of the batter into the skillet, flattening slightly. Fry for 3-4 minutes per side until golden brown.
  5. Transfer cooked pancakes to a paper towel-lined plate to drain excess oil. Serve hot with desired toppings.
